Our extra virgin estate bottled wholesale olive oil comes from the the Roldan family which has been producing olive oil since 1865. Originally oil was produced from olives harvested by members of the extended family. The bulk of this oil was returned to these other family members, who would pay for their olives to be milled with barley. The barley was used as feed for the mules which provided the motive power for the mill. The miller and his immediate family retained some of the oil for their own consumption, for sale or for exchange. Over time the family and its management team have developed the original old mill into a modern processing plant through the introduction of new technology. The current facility has three reception lines, six waiting hoppers and three production lines of two continuous phases with an annual milling capacity of over 15 million Kg of olives. Most of the olives varieties which are used are picual, lucio (an olive which comes originally from the local region), picudo, hojiblanca and arbequina. The two main wholesale olive oils produced are Castillo de Íllora and Molino de la Calzada. Castillo de Llora is made up from a blend of picual and lucio olives. It has a rich fruity green olive taste, with a distinct bitterness and a slight piquancy. Molino de la Calzada is made from a mix of varieties, arbequina, lucio, picual and hojiblanca. The flavour is mild with hints of figs and fresh grasses. In the mouth it tastes smooth and mild without bitterness but with a slight piquancy. |
