Preservation Method
Cured naturally for 18 months, with the addition of only salt at the beginning of the process. Artificial preservatives are not used and the hams are left to cure in sheds in the sierra Nevada climate. This is a traditional process managed by local experts. The company is one of only a small number of Spanish ham producers who have an EU accreditation and certificate for natural curing processes.

Review

Rossillo ham products are available as bone-in hams (thighs) or shoulders or as deboned thighs or ready sliced. Smaller shoulders (paletilla) are available with 6 months curation but the thighs, larger shoulders and all deboned hams are available as Reserva or Gran reserva hams with a curation period in excess of 16 months. These hams are of the highest quality with a superb natural flavour. The deboned hams can be sliced very thinly throughout the joint offering excellent value for money.
